I second that 'emotion.' There is nothing wrong with healthy chicken recipes. Chicken is one of my favorite things to eat. Sometimes we have chicken so many times in a row, week after week that my wife will complain that she is tired of eating chicken. I don't see how that can be, but that's alright; to each their own.

Let's try this one. It is a honey-gingered, onion-crusted chicken breast.

Ingredients:

4 skinless, boneless chicken breast halves

* 1 tablespoon honey

* 1 tablespoon orange juice

* 1/4 teaspoon ground ginger

* 1/4 teaspoon black pepper

* Dash ground red pepper (optional)

* 3/4 cup cornflakes, crushed (about 1/3 cup)

* 1/2 teaspoon dried parsley flakes

Directions:

I will line a baking dish with aluminum foil and then spray it with some non-stick spray (as compared to the 'let's stick to the dish spray). Then place your chicken breasts down in the dish. Then on the side take your honey, orange juice, ginger, black pepper, red pepper and mix them all together. you can then brush this on to your chicken breasts.

Now is where it gets interesting for these healthy chicken recipes, I will take some stick onions - you know the kind. They are like the french fried onion sticks. I will mix them with the parsley and sprinkle them all over the top. But, if you wish, you can use cornflakes and parsley mixed together and do the same thing.

One last way is you can use some Panko bread crumbs. They are a Japanese style bread crumb and they are really delicious and really give your food a nice look.

But take these and mix them up (whichever one you so desire) and sprinkle then all over the chicken and then bake. You are going to bake about 350 degrees for around twenty minutes or until done. If you are using your instant read thermometer, then about 170 degrees.

Now for healthy chicken recipes, that is one good one to put into your favorite cookbook at home and bring out every so often....for sure when you have company. And then you can always serve with some good steamed veggies and a nice salad with a lemon vinaigrette.
